It started in 2020, as a pandemic hobby - tap a few trees and boil in the backyard as a way of welcoming spring and getting outdoors after a long winter. A couple friends offered to share some equipment, and a chilly spring day led to a chillier spring night of boiling in the side yard. That first season we learned some lessons, made a gallon and a half of finished syrup, and had an awful lot of fun with just 10 taps.
